It is a cheese with a strong and persistent flavor of raw sheep’s milk that leaves a slightly pleasant, lingering spiciness.
Artisanal cheese made with the purest and freshest pasteurized milk from Merino sheep, with an aging period of 9 to 10 months. Natural rind coated with extra virgin olive oil, Iberian pork lard, and rosemary leaves. Pressed and firm paste, with small, irregularly distributed eyes.
